CREDI PETIT GÂTEAU or Lava Cake

Original name: Credi Petit Gâteau. 
Complete powder mix to produce Petit Gâteau cakes (also called Lava Cakes).

RECIPE

CREDI PETIT GÂTEAU

1 kg 15 kg
Water 435 g 4,350 kg
Vegetable Oil 300 g 3 kg

PROCEDURE

Beat all ingredients at medium speed for ± 4 minutes.
Pour ± 80 g of batter into individual greased molds with CREFINO Spray.
Baking:

  • 215 °C to 230 °C for ± 7 to 8 minutes at a deck oven.
  • 180 °C for ± 6 to 7 minutes at a rotating deck oven.

Once cooled, freeze the cakes in a blast freezer.
Storage conditions: -18 °C.
Recipe yield: ± 21 individual cakes.

NOTE: We recommend that tests are made to determine the adequate baking time to obtain the right cake crust and mellow filling.

SERVING

Take the cake directly from the freezer and heat:

  • ± 25 to 30 seconds, in a Microwave at 1000 W. Estimated time for 1 cake.
    Let set for ± 2 minutes before serving.
  • ± 12 minutes at 230 °C, deck oven
  • ± 7 minutes at 200 °C, in a rotating deck oven

NOTE: The exact time for heating the frozen cakes depends on the temperature of the oven or the microwave power and the number of pieces.
We recommend that tests are made in advance to find the right heating time to obtain a perfect result.
