Complete bread mix (100 % application) to bake Clean Label breads with Wheat and Rye flours.

Bread like in the Old Times.

RECIPE

NATURPAN MISTURA (Mixture)

1 kg 15 kg 100 %

Dry Yeast CREDIN PADARIA (BAKERY)

± 10 g ± 150 g ± 1 %
or fresh yeast ± 30 g ± 450 g ± 3 %
Water ± 700 kg ± 10,5 g ± 70 %

PROCEDURE

Mixing time: ± 15 minutes (spiral kneader) or 20 minutes (fork kneader). 
Dough final temperature: ± 26 ºC.
Resting time: ± 30 minutes.
Divide, Weight, Roll: ± 100 g; ± 200 g; ± 400 g, etc.
Resting time: ± 15 minutes.
Shape with the desired formats: round, elongated or other formats.
Proofing time: ± 35 a 40 min. (30 ºC / 70 % humidity).
Dust and / or make small cuts (optional).
Bake: with vapor at the beginning.

  • Small pieces: ± 240 ºC (top) / ± 220 ºC (stone). Time: ± 15 a 20 minutes.
  • Larger pieces: ± 240 ºC (top) / ± 220 ºC (stone). After 10 minutes drop to 210 ºC.
    Time: ± 35 a 40 minutos.
