CREMA WHITE
Original name: Crema Branca.
White fat emulsion, with neutral flavour, for filling, coverage and decoration of Pastry.
PROCEDURE
Whip with spatula for ± 10 minutes at medium speed.
After whipped, the creamy emulsion should double its initial volume, acquiring a lighter white colour.
Aromas, liqueurs or edible colourants can be added.
